Introduction

Similar to salmon patties or crab cakes, this recipe is fast, easy, very tasty and forgiving. It's kid friendly to! The onions are optional (exclude if feeding kids) and the bread crumbs do not need to be precise. You can also add a bit of Parmesan cheese, garlic powder/salt, dill or parsley to the mix. Ingredients

    3 cans tuna
    3/4 cup Italian seasoned bread crumbs (approx.)
    1 large/jumbo egg
    1/4 small onion chopped (approx. 4 Tbsp. - optional)
    4 Tbsp vegetable oil (approx.)
    1 tsp Lemon juice (optional)

Tips

If the mixture is too dry, then add another egg. If too moist, then add more bread crumbs. But more egg and bread crumbs will make a blander tasting tuna burger, so you may need salt/pepper or more lemon juice at the dinner table. I personally love to saturate mine in lemon juice and serve with broccoli and cheese rice and a side of cooked spinach. However my family likes to eat theirs plain, without any lemon juice.


Directions

Drain tuna and place in a large bowl. Add egg and onions and about 3/4 of the bread crumbs. Mix ingredients, then knead it with your hands for a few seconds to test the consistency to see if it sticks together good enough to make patties. Add bread crumbs as needed until you get a good consistency. Create 4 patties.

Put the oil in an 8" pan and insure the oil covers the bottom of the pan (add more oil if a larger pan is used). Heat oil on low-medium heat for minute or two, then carefully add the patties to the oil. Fry for approximately 3-5 minutes on each side (flipping carefully) until golden brown.

Remove the patties from the hot oil and place on a paper towel covered paper plate. Blot the top of the patties with another paper towel while hot to absorb any excess oil (and calories). Drizzle with lemon juice (optional).
