Ingredients

    1 tbsp olive oil
    1 onion
    1 heaped tsp group cumin
    1 litre vegetable stock/chicken stock
    8 small cooked and peeled beetroots
    salt and pepper to taste

    fromage frais and coriander to garnish is optional.

Tips

love this warm in winter but also good chiled in summer.


Directions

heat the oil and add the onions and ground cumin. Cook over moderate heat until nearly soft but dont brown. Add stock and beets season and cook for 25 mins.

let the soup cool slightly and the puree until smooth.

Reheat and season as desired.
