    565 grams lean chicken breast, ground
    6 slices melba toast, ground
    c. skim milk (you can have 1 Tbs. of milk a day in P2)
    1 egg
    1 t. Italian seasoning
    1 T. dry minced onion
    t. dry garlic powder
    1 t. dry parsley flakes


Suggestion: Serve in a pureed tomato, celery or fennel soup. Or serve in a broth of ginger, garlic, lemon grass slices, a squeeze of lime juice, and your choice of soy sauce/Bragg's/Thai fish sauce. (That tastes great with bok choy!)


Preheat oven to 375. Pour milk over melba toast. Mix together all ingredients. Form 18 meatballs. Bake on a cookie sheet for 20 minutes.

Serving Size: Makes 6 servings, 3 meatballs each (1 protein, 1 starch, 1 milk)
