Ingredients

    1 Purdue Perfect PortionsChicken Breast
    1/2 Boil-in-Bag Success White Rice (Success)
    1 Tbsp Smart Balance Buttery Spread
    2 Tbsp Diced Onion
    2 Tbsp Diced Green Bell Pepper
    1 Tsp Minced Garlic
    1/4 Cup Dried Cherries
    1/4 Cup Swanson Chicken Broth
    1 Tbsp Kikoman Thai Style Chili Sauce

Directions

I like to prepare my meals quickly, so please feel free to change the way in which items are prepared.

First, place the chicken breast on the grill (I use a Foreman). Set up the boil-in-bag rice. Next, melt the butter in a sautee pan over medium heat. Add the onion, green bell pepper and garlic and cook until the onions are transulcent, should only take a couple of minutes. Add the dried cherries, chicken broth, and chili sauce, stir well and cook over medium heat for approx. 5 minutes.

I like to cut the chicken up into bite size pieces and add the rice and chicken to the veggies and sauce to meld all of the flavors. You can build it however you desire. Enjoy!

Would also be good as a stir fry.
