Number of Servings: 8


    2 Lbs Ground turkey or chicken
    1 Med onion
    2 Garlic cloves
    1 cup salsa of choice
    1 can 16oz low fat re fried beans w/flavor
    1 can Campbell healthy choice tomato soup undiluted
    6-8 whole wheat tortillas large
    2 1/2 cups shredded low fat cheese for topping and layers


* you can add any beans instead of re-fried I have tried the chilli beans and it is just as good.


preheat oven @ 350

Dice up medium onion and garlic cloves and cook in large skillet pan until tender. Place onions in bowl. Add the turkey meat and cook thoroughly add onion and garlic mix back in pan. Add the remaining salsa, soup and beans and cook until heated through.

In large rectangular pan 12x9 spray pan with pam. Add your first tortilla layer covering bottom pan, you can rip them so it fits. Then add meat mixture on top then sprinkle cheese. Add more tortillas on top on cheese and repeat layers. add remaining meat on top and cover with remaining cheese. two full layers the top will be partial.

Put in oven for 30min until cooked through and cheese melted. Take out and let cool for a min. enjoy!
