A terrific casserole; you won't miss the meat! A terrific casserole; you won't miss the meat!
Number of Servings: 8

Ingredients

    1 lb summer squash
    1 medium onion
    2 cups fat free cheddar cheese
    1 large egg
    1/4 cup light margarine
    6-8 buttery round party crackers
    1/4 cup milk
    salt
    pepper

Directions

Chop or grate squash and onion.
Cook in salted water until soft.
Drain water.
Mash squash and onion.
Add egg, cheese, milk, butter. Mix into squash.
Crumb the crackers, add to mixture.
Bake in 350*F oven for 25-30 minutes.
