Introduction

I borrowed this from a web page I saw one day. I am in no way taking any credit for this!! I just wish I remembered where I read it so I can give them the credit! Ingredients

    1 bell pepper - chopped
    1/2 onion - chopped
    1 can black beans - drained and rinsed
    1/2 c. salsa
    3 whole eggs
    1 c. liquid egg substitute
    2 oz. shredded cheddar cheese

Directions

Cook onion and bell pepper in cooking spray until soft. Beat eggs together in separate bowl. Combine onion, peppers, salsa, black beans. Spoon mixture evenly into 12 cupcake tins. Pour egg mixture over evenly. Evenly divide the cheese between the 12 cups. Bake @ 350 for 25 minutes.
