Introduction

This is my own invention. It's wonderful by itself or served over pasta. This is my own invention. It's wonderful by itself or served over pasta.
Number of Servings: 6

Ingredients

    2 lbs chicken breast, cubed
    2 cups baby spinach, chopped rough
    1 tablespoon minced garlic
    1 tablespoon margarine
    10 cherry tomatos, halved

    Sauce:
    1/2 cup milk
    1 tablespoon minced garlic
    20 cherry tomatos
    1 tablespoon butter


Directions

Brown the chicken breast add spinach and tomatos along with garlic and margarine. Simmer until spinach just wilts.

In a saucepan, add sauce ingredients and boil until reduced to half its original volume. Pour in blender and blend until smooth.

Serving Size: Makes 6 servings
