Introduction

This is the first Meal to my 365 Meal Project, to which I've been posting on Storymash.com, and Triond.com under Lilithia.

Number of Servings: 6

Ingredients

    2LBS Ground Beef

    1 Large Onion, Chopped

    1 Large Bell Pepper, Chopped

    1 Cup (8 oz) Cheddar Cheese, Grated

    12 Burrito Size Flour Tortilla (or one and a half packages)

    1 (8oz) container Sour Cream

    About 8oz French Fries

    ½ head of Lettuce Chopped

    1 (15.25oz) can Black Bean, Drained

    2 Tablespoons Taco Seasoning

    1 Tablespoon Lemon Juice

    3 Avocados

    ½ cups Salsa

Tips

Diabetic Friendly:
Take out the Tortilla turn it into a salad by adding all the ingredients to a bed of lettuce. The total Carbohydrate will then go down to 34.7g as long as you are using 10 french fries.

Tip: Make it a wet burrito by adding Enchilada sauce.

For Left over: Freeze meat up to 6 Month's, depending how much is left, this can be turned into Nachos, Put into Enchilada Soup, Made into Tacos, Enchiladas, Layered Bean Dip, and Spanish Rice.

For Single People: Package left over mean and beans into 4 Oz Serving sizes, or what ever you feel is more your proportion size and turn it into other meals for later see left overs for meal Idea's, and freezing details.


Directions

Preheat oven 400 degrees

Prepare Onion, and Bell Pepper, then in a tablespoon of oil, saute Onions, until they become translucent in color, then add bell pepper and saute for about 5 minutes before beginning to brown meat. Drain fat off the meat and then add the taco seasoning.

Cut the Avocado in half and remove the pit, and then remove from skin into a bowl with ¼ cup of sour cream and salsa. Using a fork mash together before adding lemon juice.

Cook French Fries according to the packages directions.

Putting the burrito together:

Take 2 Tortilla’s and set them so that they over lap by about 2 to three inches, and place on a thin line of meat, Beans, fries, and cheese and put into the oven until the cheese has melted. Carefully move to a plate or continue to make the burrito by adding Lettuce, Sour Cream, Avocado Mix, and salsa, and roll the best you can, placing seam side down on a plate if you haven’t already moved it.

Serving Size: Makes 6 Burritos
