Ingredients

    2 Tbsp. olive oil
    1 onion, chopped
    3 cloves of garlic, minced
    1/2 c. dry white wine
    4 c. chicken broth, fat free
    2 c. broccoli florets, fresh or frozen
    3 Yukon Gold potatoes, peeled & diced
    1/2 tsp. thyme
    1/4 tsp. salt
    1/4 tsp. black or white pepper
    1 can white crab (not lump), drained
    1 lb. shrimp, detailed & cooked
    1/2 c. sour cream
    1/2 c. corn (canned or frozen)

Directions

Saute onion & garlic in olive oil. Add white, broth, seasoning, broccoli & potatoes. Bring to boil, cook until vegetables are soft, about 15 minutes.
Puree about 3/4 soup in a blender or with immersion blender.
Add: shrimp, crab, corn, sour cream & heat through while stirring, about 5 minutes.

Serving Size: Makes 8 one cup servings
