Introduction
Each of the main ingredients were leftovers from big family get-together. I like this better that roast beef or corned beef hash. Adding the poached egg gave me a very full tummy and I had no desire for snacks before lunch. I put this as a breakfast item, but you can make this for whatever meal you prefer! Ingredients

• 2 pats of butter
• 1/2 cup boiled potatoes
• 1 tbsp powdered onion
• 1/2 cup cooked ham
• Mrs Dash to taste
• dried crumbled thyme to taste
• 1/4 cup or less cooked mushrooms
• 1/4 cup or less cooked carrots
Tips
You can use whatever vegetables you have leftover. It's also a great way to get your kids to eat the vegetables they wouldn't eat before. It's really hidden and only adds a new flavor dimension to your hash without the "texture" they hate.
You can also add cooked onions if you prefer. I use whatever I have on hand, but if I have a "texture phobic" eating with me, I will use onion powder instead. No NEED FOR SALT SINCE LEFTOVER HAM AND BUTTER HAVE PLENTY.
Directions
Combine ham, boiled pototes, carrots and mushrooms into a food processor and blend together. Do not puree!
Once blended, add in spices and mix so it is incorporated throughout the hash.
Melt butter in an iron skillet over medium low to medium heat. Cook until browned on bottom
When has is just about ready,in separate pan, POACH two eggs
When hash is done, place half amount on each plate
then place poached egg in the middle of hash and enjoy!
