Ingredients

    2 lbs lean ground beef
    2 tsp salt
    1 tbsp each cumin, chili powder, paprika, dried oregano, black pepper
    2 cloves garlic, minced
    2 tsp red pepper flakes
    1/4 tsp ground red pepper
    1 tbsp vegetable oil
    3 cans (10.5 oz each) diced tomatoes with green chilies or red peppers
    1 jar (16 oz) salsa
    1 lg onion, chopped
    2 lg celery stalks, sliced
    1 can sliced mushrooms, drained
    1 can red kidney beans, rinsed

Directions

1. Combine ground beef, salt, cumin, chili powder, paprika, oregano, black pepper, garlic and red pepper in a large bowl.

2. Heat oil in large skillet over medium-high heat. Brown beef, stirring to separate meat. Drain and discard fat. Add tomatoes, salsa, onion, celery, mushrooms, kidney beans; mix well. Transfer mixture to a 6 quart slow cooker.

3. Cover; cook on LOW for 4 to 6 hours.
