Ingredients

1 cup original couscous
1 1/4 cup reduced sodium chicken broth
3 tbsp unsalted butter
2 tbsp olive oil
2 cups chopped broccoli
1 medium onion, cut into half-rings
4 tbsp minced garlic
1 cup frozen corn kernels
2 tsp black pepper
2 tsp kosher salt
2 tsp garlic powder
Directions
Heat the oil and 2 tbsp butter in a skillet. Cook the onions until carmelized, about 15-20 minutes. Add the garlic and cook another 10 minutes. Remove from pan and set aside.
Separate the broccoli florets and blanch in a pot of salted boiling water for 3 minutes. Put in ice water to stop the cooking. Set aside.
Heat up the chicken broth, 1 tbsp butter, and salt to a boil. Add the couscous, stir, cover and turn off the heat. It'll cook in about 5-10 minutes. Add the onions, broccoli and corn kernels, garlic powder and heat through.
Serve immediately.
Serving Size: makes 4 1-1/4 cup servings
