Ingredients

    4 cups cooked brown rice
    8 cups fresh vegetables (ie. Broccoli, Cauliflower, Red Cabbage)
    1 cup onion, chopped
    4 eggs, lightly beaten
    2 tbsp canola oil
    1 tbsp soy sauce

Directions

In a large pan, heat oil on medium-high heat. Add onion and rice. Stir and cook until onion is soft, about 5 minutes. Reduce heat to medium and add vegetables. Cook 5-7 minutes or until desired softness. Scramble eggs and add to mixture. Sprinkle with soy sauce and serve warm.
Makes 12 - 1 cup servings.

    Very Good
    This turned out really well. It wasn't as tasty as I was hoping initially, but for the calories and fat - I think it was nice. I would make it again. - 7/1/08
