Introduction

Ingredients

    4-5 small red potatoes (but you can use any)
    1/2 large onion diced
    6 mushrooms diced
    3/4 cup egg beaters
    1 to 3 TBS olive oil (depending how large your potatoe are to help brown the potatoes in the skillet)
    1-2 TBS smart balance light to cook onions and mushrooms.
    1/2 cup shredded low fat cheese. (you will have extra fats in olive oils and smart balance).

Directions

Add 1 TBS smart balance and then add diced onions. Add diced mushrooms; cooking over medium heat in a skillet. Add olive oil (depending on how large your potatoes are--add 1-3 TBS of olive oil to coat and brown) and any spice to taste. Add pre-cooked potatoes (you can microwave them first to soften them) to the mushrooms and onions. Finally add eggbeaters to the mixture. Cook for a bit on the stove. Then in your oven safe skillet, add cheese to the top, then put in the oven to brown the cheese on top.

Serving Size: 1/6 of a circular pan.
