Introduction
This is my take on the Southern Pimento Cheese recipe on AllRecipes. I used lower fat cheeses and a cut way down on the mayo, subbing it with fat free Greek yogurt. Ingredients

2 cups (about 4oz) shredded extra-sharp Cheddar cheese
8 ounces cream cheese, softened
2 tbsp mayonnaise
.35 cup Fat free Greek yogurt
1/4 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper (optional)
1/4 teaspoon paprika
1 jalapeno pepper, seeded and minced (optional)
1 (4 ounce) jar diced pimento, drained
salt and black pepper to taste
Tips
I prefer my pimento cheese warmed, so I made a sandwich on a whole wheat hoagie and warmed it in the oven on 275 for about 5-7 minutes.
Directions
Mash the pimento with a fork to a smooth consistency so it will mix better.
Place the Cheddar cheese, cream cheese, Greek yogurt, mayonnaise, garlic powder, cayenne pepper, paprika, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed until thoroughly combined.
