I found this recipe while searching for yummy Paleo dishes. The end result is more like a cake than pancake & I liked it best cold than warm but either way it is delicious! Ingredients

    12 Eggs
    2 cups coconut milk (or almond milk)
    1/3 cup coconut oil, melted
    1 tbsp vanilla
    1 tbsp maple syrup
    1/2 cup coconut flour
    1 tsp baking soda
    1/8 tsp nutmeg
    2 apples (sliced 1/8" thick)
    1 pear (sliced 1/8" thick)

    1/4 cup coconut oil
    1/4 cup maple syrup
    1 tsp cinnamon
    1 tsp nutmeg

Directions

Preheat oven to 425 degrees

In a large bowl whisk eggs, coconut milk, 1/3 cup melt coconut oil, vanilla & 1 tbsp maple syrup. In a smaller bowl stir coconut flour, 1/8 tsp nutmeg & baking soda. Mix dry ingredients into wet ingredients. Set side while you prepare apples & pears.

In a skillet or frying pan, heat 1/4 cup of coconut oil & 1/4 cup maple syrup. Stir in cinnamon & nutmeg & then add apple & pear slices tossing & coating in the glaze & cooking for 1 minute.

Pour the apples & pears into a greased 9x13 baking dish or pan. Spread fruit out evenly. Pour egg mixture over fruit.
Bake 20 minutes in preheated oven then reduce heat to 375 degrees & continue to cook for 20 - 25 min.
