Ingredients
-
2 pie crusts (I used store bought Pillsbury)
1 pound of beef stew meat
2 potatoes
1 onion
1/2 rutabaga
1/2 carrot
fresh parsley
1 tab beef bouillon
salt and pepper (to taste)
butter
Directions
Oven at 350 degrees. Line cookie sheet with parchment paper.
Dice potatoes, onion, rutabaga, and carrots. Put into large bowl.
Add meat to the bowl.
Add about 4 tablespoons fresh chopped parsley, salt and pepper, and beef bouillon (crush if necessary). Stir.
Roll out pie crusts into 6 inch rounds. Or...if you are round challenged just use rectangles.
Put about 1 cup of filling (or whatever you can manage and still close) in the round, and 1 tab of butter. Fold in half, press the edges together, crimp with fork.
Bake them for about 45 minutes or until golden brown.
We like to serve these with gravy. Here is a quick brown gravy recipe...
1/4 cup butter melted in a saucepan.
Add 3 tablespoons beef bouillon.
Heat.
Mix together 1 1/2 cups of water with 1/4 cup flour.
Add slowly to butter mix, whisking as it is added.
Heat, whisking continuously.
