Ingredients

    2 large chicken breasts, boneless, skinless
    1 c. uncooked orzo
    1 8oz. package of sliced fresh mushrooms
    vegetable cooking spray
    1 bouillon cube
    1 16 oz package of frozen spinach
    1 10 1/2 oz. can reduced fat cream of mushroom soup
    1/2 c. reduced fat mayonnaise
    2 T. lemon juice
    3/4 c. shredded reduced fat sharp cheese
    1/4 c. Italian bread crumbs
    1/2 t. basil



Directions

Boil chicken in water to cover till done. Add bouillon cube to water. Remove chicken, chop and set aside. Cook orzo in reserved broth till done. Drain orzo. Reserve 1 c. of liquid. Add pasta and liquid back to pot. Saute mushrooms in nonstick pan coated in vegetable cooking spray till soft. Add chicken, spinach soup, may, lemon juice and basil to orzo. Mix. Spray 9 x 13 pan with cooking spray. Spoon mixture into dish and top with cheese and bread crumbs. Bake at 350 for 30 minutes.
