Ingredients

    1 zucchini, diced
    .25 cup button mushrooms, diced
    2 wedges Laughing Cow Garlic & Herb cheese
    .25 cup gluten free cornflake crumbs (I use Southern Homestyle)
    2 portobello caps
    I can't believe it's not butter to saute
    salt and pepper to taste

Directions

Saute' diced veggies with a few sprays of I can't believe it's not butter spray. When sauteed, remove from heat and add salt and pepper to taste. Add wedges of cheese and mix. When mixed, add cornflake crumbs. Top portobello caps with mixture and broil till bubbly.
