After reading "Born to Run", I started making these pancakes. They are one of our favorites! I love to add cinnamon and either walnuts or pecans. Ingredients

1 c cooked rice
2 eggs
1 ripe banana
1/2 cup milk
1 Tablespoon flour
Optional: Add a little cornmeal, cinnamon, brown sugar, nutmeg, vanilla, walnuts, pecans, etc.
Directions
Blend all ingredients. Cook each side until slightly browned.
