Ingredients

    olive oil
    3 rashers of quality smoked streaky bacon, roughly chopped
    2 fresh bay leaves
    2 sprigs of fresh rosemary
    1 whole rabbit, skinned (ask your butcher to do this for you), including offal
    1 bulb of garlic (left whole), white skin peeled away
    2 leeks, washed, topped and tailed
    2 carrots, washed, topped and tailed
    2 sticks of celery, washed and trimmed
    2 red onions, skin on, washed
    20g dried porcini mushrooms
    2 x 400g tins of chopped tomatoes
    1 x 500ml can of light smooth beer/ale
    2 tablespoons tomato purée
    sea salt and ground pepper
    1 whole nutmeg, for grating
    1⁄2 lemon
    a few sprigs of fresh thyme

Tips

12 hours in the oven cooking very slowing then lots of lovely hands on squishing!
