1/2 cup milk
1/4 cup cooking oil
1 tsp baking powder
1/2 tsp salt
Tips
This recipe provides a nice base for lots of foccacia ideas. Herbs and garlic can be added to the batter and and the top sprinkled with cheese for a nice accompaniment to Italian dishes. Also makes a great carrot bread with the addition of a grated peeled carrot and some pecans with 1/4 cup brown sugar.
Directions
Preheat oven to 350. Line a baking sheet with parchment or foil and lightly grease it.
Mix flax meal, salt and baking powder. The absolute best is to grind fresh golden flax to make your own flaxmeal at the time of baking. Blend eggs, oil and milk in a mixer or with a whisk. Whisk dry into wet ingredients and wait 10 minutes to firm up.
Pour onto prepared pan mounding slightly. Bake 15 to 20 minutes until more golden, browned and dry on the edge and the middle bounces when pushed.
Cool slightly and cut into quarters to serve. Can be sliced in half to make sandwiches.
