Ingredients

    12 large mushrooms
    2 Tbsp Balsamic Vinegar
    1 tsp dried basil or 1 Tbsp fresh
    1/2 tsp garlic powder
    1/4 tsp smoked paprika
    1 can tiny shrimp, drained and rinsed
    1/2 c reduced fat Feta cheese
    1 small tomato, diced
    1/4 c dice bell peppers
    2 Tbsp dice scallions
    1/4 c plain bread crumbs
    salt (optional)
    pepper(optional)

Tips

The mushrooms do not have to be marinaded if you don't like the taste of balsamic vinegar.


Directions

Clean and remove stems from mushrooms. In a sealable plastic bag mix vinegar, basil, garlic, and paprika. Add cleaned mushrooms and shake. Let marinate for at least 1 hour. Preheat oven to 425 degrees. In a small bowl combine shrimp, feta, tomato, bell peppers, scallions, bread crumbs, salt and pepper. Drain marinade off mushrooms and stuff with shrimp mixture. Bake for 15 minutes.
