A really delicious and easy way to prepare quinoa! A really delicious and easy way to prepare quinoa!
Number of Servings: 6

Ingredients

    2 cups of quinoa (hot or cold, your preference)
    1 can black beans, rinsed and drained
    1 can corn, drained
    2 tablespoons extra virgin olive oil
    2 tablespoons white vinegar
    2 tablespoons chili powder
    1 tablespoon garlic powder
    cayenne pepper to taste (optional)
    salt & pepper to taste (optional)

Tips

This can be served warm or chilled.


Directions

Combine in a bowl two cups cooked quinoa, black beans, and corn in a bowl. Stir in the olive oil, vinegar, chili powder, garlic powder, cayenne pepper, and salt and pepper. Serve.
