Ingredients

5 boneless pork chops
2 Tbs olive oil
I medium onion, chopped
1 bell pepper sliced or chopped to your preference
2 tsps minced garlic, fresh or jar variety
14.5 ounce can of no salt diced tomatoes
1 jar Prego Heart Healthy spaghetti sauce
sm can sliced mushrooms or sliced fresh mushrooms
2 tsp italian seasoning (oregano is fine if you don't have)
1 tsp basil
5 oz reduced fat or part skim mozarella, shredded
10 oz (dry) whole wheat spaghetti (or other pasta)
Directions
In a large skillet or pan, brown chops quickly on both sides. Place in bottom of slow cooker. Add olive oil to pan and cook chopped onions and peppers until soft. If using fresh mushrooms you can add these in as well. Add in canned tomatoes and pasta sauce, canned mushrooms, garlic, and spices. Stir to incorporate flavors. Pour over chops and cook in slow cooker on low for 6-7 hours depending on chop thickness. When nearly done, prepare pasta according to instructions. Place chop on each plate with half a cup of pasta next too it. Cover both with sauce and spinkle 1 oz of shredded mozarella over both. Serve with a salad, marinated cucumbers, or steamed broccoli and carrots. Enjoy!
