Ingredients

    1 lb chicken sausage
    2 leeks, chopped
    2T olive oil
    1 qt chicken broth
    1 qt water
    1 potato, small dice
    4-6 carrots (1 cup slciced)
    1 c kale, chopped
    2T better-than-bouillon vegetable base
    juice of 1 lemon
    1T grated fresh ginger

Tips

Great when you have a cold. Also good with a cheese sandwich.


Directions

cook chicken sausage, drain, set aside.
saute leeks in olive oil till translucent. Add all the rest of the ingredients (including the chicken sausage), bring to a boil, and simmer for an hour. (Ok to leave on low for longer.)
