Introduction

Ingredients

    4 tilapia filets
    1 red bell pepper, chopped
    1 orange bell pepper, chopped
    1 yellow bell pepper, chopped
    2 cloves garlic, minced
    1 TBS olive oil
    1 cup (or 1 can) crab meat
    4 tsp cajun seasoning
    4 oz fat free cream cheese
    salt and pepper
    garlic salt

Directions

1.) Rinse the filets, and pat dry.
2.) Preheat oven to 400 degrees. Cover cookie sheet with raised edge/baking pan with foil and spray with olive oil.
3.) In a skillet, saute 1 TBS olive oil and garlic. Add bell peppers and cook to your liking. I like mine a little burnt. Add a little cajun seasoning if you wish, and salt and pepper.
4.) Turn the heat on low and add about 2 oz of the cream cheese to the bell pepper/garlic mixture. Add crab meat. Cook until cheese melts, stirring constantly. If it starts burning, take it off the heat.
5.) (You can do this earlier if you wish) Spray each tilapia filet with olive oil, on each side. Rub cajun seasoning and salt and pepper on each side. Just add as much as you think will taste good. Place filets on cookie sheet.
6.) Cut 2 oz of cream cheese into 4 skinny strips and place one on top of each filet.
7.) You can either spread the crab meat/bell pepper mixture on 2 filets, then sandwich the other two filets on top to make it "stuffed" OR you can just evenly divide the crab meat/bell pepper mixture on top of all 4 filets.
8.) Bake in the oven for about 20 minutes, or until the fish begins to flake.

Note that the serving size really depends on how much you want to eat and the size of your filets. The nutritional info is based on me, eating about half to three quarters of a filet with the crab meat mixture. I eat every three hours so I dont eat as much each time.

Serving Size: Makes 4 filets, but serving size depends on how much you eat with the filling.
