Ingredients

    4 pound spaghetti squash
    2 cups ricotta cheese
    1 egg
    4 cups chopped fresh spinach
    2 minced garlic cloves
    1 teaspoon salt
    1/8 teaspoon black pepper
    1 pound ground turkey or chicken Italian sausage
    2 cups canned diced tomato
    2 cups grated mozzarella cheese

Directions

Cut 4 pound spaghetti squash in half lengthwise, scoop out the seeds, drizzle olive oil on the flesh, and add a touch of salt and pepper. Bake cut side down on a baking pan for approximately 45 minutes in a 350 degree oven or until tender. Remove squash from oven and let cool slightly. Remove squash from pan and scrape out flesh into a pan using a fork.

In large bowl, combine the squash with ricotta cheese, egg, spinach, garlic, salt, pepper, and Italian sausage. Transfer mixture to a 9 x 13 inch baking dish and top w/ diced tomato. Sprinkle w/ mozzarella cheese and bake 20 - 25 minutes in a 350 degree oven until casserole heats through and cheese melts.
