Ingredients

    1 Tbsp olive oil
    3/4 lb red potato, thinly sliced
    1 sm onion, thinly sliced
    9 large eggs
    1/2 tsp black pepper
    1 10-ounce package frozen chopped spinach, thawed & squeezed of excess liquid
    4 ounces of 2% milk reduced fat cheddar cheese, grated
    4 ounces thinly sliced low sodium deli ham-sliced in 2" pieces

Tips

I didn't add any extra salt to recipe (need it to be low sodium)...adding red pepper flakes to your slice after it is cooked gives it the added flavor it needs:)


Directions

1. Preheat oven 400 degress. Heat oil in large ovenproof skillet over medium heat. Add potatoes & onion and cook, tossing occasionally 12-15 min--until potatoes are tender.
2. Meanwhile, in la arge bowl, whisk together eggs & pepper. Mix in the spinach, cheese & ham.
3. Add egg mixture to skillet, stir once & put skillet in oven. Cook until eggs are set, 12-14 minutes.

Serving Size: makes 8 servings
