Ingredients

    1 doz. Candy's corn tortillas (or whatever you can find)
    2 tbsp vegetable oil
    2 chicken breasts, cooked and shredded
    Hernandez Chili Enchilada Sauce Mix
    1 or 2 cans Tomato sauce
    1 or 2 cups water

Tips

Excellent with a dash of guacamole, sour cream, pico de guillo, or salsa. The longer the sauce cooks, the milder the spice. Cook time includes cooking the chicken.


Directions

Follow directions on Sauce mix, adding tomato sauce to taste.
Heat oil in small pan. Flash fry each tortilla just until bubbles form under it (just enough to make them soft and pliable). Roll a small handful of chicken with a few pieces of chilis into each tortilla. Pour sauce over rolled enchiladas. Top with cheese. Bake at 350 F 15-20 minutes, or until cheese is melted and enchiladas are heated through.
