Introduction

Number of Servings: 3

Ingredients

    1/2 chopped carrots
    1/2 chopped celery
    1/2 chopped onion
    1/2 cup of uncooked brown rice
    10 oz chopped chicken (I use one from the deli)
    1 qt of Pacific Chicken broth
    1 cup of water
    1 tsp Onion powder
    2 tsp Garlic powder
    1 bay leaf
    salt and pepper to taste

Tips

Make sure you check all labels for gluten free products. Autolyzed yeast extract is gluten!


Directions

Bring to a boil chicken broth, water and rice over medium high heat. Once boiling reduce to medium, add spices and allow to boil for 30 minutes. Add chicken and vegetables, allow to simmer for 20 minutes or until rice is fully cooked and veggies are tender.

Serving Size: 3 hearty servings, 4 if you want smaller portions
