Should substitute Turkey Sausage, however I had to use up what I had in the house. Ingredients

1 Frozen ready to bake pie crust
4 eggs
1 cup Almond Milk (or skim)
1 cup Fat Free Shredded Cheddar Cheese
1/2 cup Fat Free Shredded Mozzarella Cheese
4 oz diced Smoked Sausage
1/2 to 1 cup chopped onion
salt & pepper to taste
cajun seasoning to taste
Tips
Add other veggies or low fat meats for variety and less calories! Enjoy!
Directions
Pre-heat oven to 350. Place pie shell in pie pan. Dice sausage and onion and heat in skillet on stove until onions are translucent. Spread sausage/onion mix and both cheeses across crust evenly.
Mix eggs, milk, salt, pepper, and cajun seasoning in bowl until mixed well. Pour over sausage, onion and cheese in pie shell.
Bake @ 350 for 35 minutes or until knife inserted in middle comes out clean.
