Introduction

Took inspiration from other recipes and made it my own. Took inspiration from other recipes and made it my own.
Number of Servings: 6

Ingredients

    2 T Olive Oil
    1 Small Onion, diced
    1 Jalapeno, diced
    1/2 Bell Pepper, diced
    3 Cloves Garlic, diced
    Black Pepper (approx. 1 tsp or to taste)
    Cumin (approx 1 tsp. or to taste)
    2 Cans (15 oz. each) Diced Tomatoes
    1 Can (15 oz.) Black Beans
    1 Can (15 oz.) Whole Kernel Corn
    1 Can (15 oz.) 100% Pumpkin Puree
    1 Can (15 oz.) Chicken Broth

Tips

I also used some other ground chiles for spice because we like it spicy!


Directions

Heat olive oil in large pot. Add onions and peppers. Season with black pepper and cumin. Cook for 3-4 minutes until soft. Add garlic and cook 1 more minute. Add all canned items and cook until heated through.
