Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 medium
    Green Peppers (bell peppers), 1 cup, chopped
    *Peppers, sweet, red, fresh, 1 medium
    Carrots, raw, 1 large
    Sonic Sonic Green Chiles, 4 serving
    Garlic, 2 cloves
    Lentils, 2 cup
    Tomato Paste, .5 can (6 oz)
    Beans, red kidney, 2 cup
    Beans, pinto, 2 cup
    Stewed Tomatoes, Canned, No salt, 3.5 Cup
    Chili powder, 4 tbsp
    *Cumin seed, 4 tsp
    1/4 tsp. crushed red-pepper flakes
    Salt and Pepper to taste.

Directions

In a large soup pot, heat olive oil over medium heat. Add onion, green and red peppers, carrot, green chilis,and garlic. Cook until the vegetables soften. about 5 minutes. Stir in 7 cups of water, lentils, tomato paste, kidneys, and pinto beans. Stir to blend, adding stewed tomatoes, chili powder, cumin, and crushed red-pepper flakes. Bring to a boil. Reduce heat to medium-low, cover and simmer until lentils are tender, about 45 minutes. If the chili starts to dry out, add hot water as needed. Season with salt and pepper and serve immediately.
