Ingredients

    3 yams
    3 potatoes
    6 strips bacon
    1 c corn
    4 c chicken stock
    1 c cream
    1 onion
    dash of whiskey (optional)
    salt and pepper to taste

Tips

If you don't use cream, at least use half and half. It is blah with 2% milk and skim sounds horrible. It does taste good with coconut milk, though, if you need it to be dairy-free.


Directions

peel and cube yams and potatoes; cook in chicken stock until yams are soft. Fry bacon until crispy; remove bacon to a paper towel to drain. Mince onion and cook in bacon fat until translucent, then add to yams and potatoes. When yams are soft, you can leave the chunks of veggies whole, mash them with a masher or blend with a hand blender depending on how smooth you want your soup. Stir in corn and simmer for 10 minutes. Add cream and whiskey (if whiskey is desired) and bring back up to serving temp. Add salt and pepper to taste.
