Ingredients

    1/2 cup light sour cream
    1/2 cup milk
    2 whole eggs plus 6 egg whites, lightly beaten
    8 ounces shredded reduced-fat Cheddar cheese
    1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
    1/2 large onion, chopped
    3 cloves of garlic, pressed or chopped
    3 slices of bacon
    1 (10 inch) unbaked pie shell

Directions

Preheat oven to 400 degrees. Line a cookie sheet (with an edge-- to catch overflow) with foil.

Fry bacon until crisp, crumble and set aside. Drain grease from pan, but don't wash. Using same pan, saute onions and garlic until soft.

Layer spinach, bacon, onions, and cheese in pie shell, making several layers of each. Lightly pepper between layers, if desired.

Whisk together sour cream and milk until smooth. Whisk in eggs and egg whites. Pour egg mixture into (already filled) pie shell.

Cover quiche with foil and bake for 45 minutes. Uncover and bake 15 minutes more, or until top is golden brown and filling is set (doesn't wobble). Oven times vary, so keep an eye on it.

    Incredible!
    I didn't have a low fat crust, but did have low fat swiss cheese! Used bacon bits, so used a little olive oil to saute onions....yummy. - 12/3/10

    Very Good
    I used a little less spinach, no onions, mozzarella cheese and a glass pie dish rather than a crust, but it turned out very tasty! Thanks for the idea! Maybe next time I will add more bacon.. - 6/1/08
