Introduction

Ingredients

    1 cup ground flax meal
    2 tbsp. coconut flour
    6 tbsp. egg whites
    1/2 tsp. salt

    Optional: Dried herbs, chili powder, garlic powder, or kelp powder are all great additions for a more flavorful tortilla

Tips

Flax meal is expensive, but flax seeds are pretty cheap, so I like to buy the seeds and grind them up in a coffee mill. Works great!


Directions

Combine all ingredients in a small bowl with a rubber spatula until the dough is stiff and fairly dry; you should be able to handle it without it sticking to you. Let it sit for 2 or 3 minutes before rolling.

Divide the dough into 8 even portions. Roll out each portion with a rolling pin until it's as thin as possible -- I got mine to about 5 1/2" across.

Grease a non-stick griddle or skillet and place over medium-high heat. Cook the tortillas for about 45 seconds per side, or until golden brown.

    I really wanted to like these, but they are nothing like a tortilla. They are stiff and brittle. I think I'll use them as a cracker, but as a tortilla, sorry, they just don't work. - 10/21/12
