Introduction

Serve with something healthy and green! Feel free to add in your own touch. My hubby doesn't like onions or peppers--why I use powders! Remember small portions. Ingredients

    2lb. chuck roast (try to find one without a lot of fat)
    EVOO drizzle a little on vegetables and meat
    10 Baby Carrots (more or less on family size)
    6 Medium red potatoes
    2 tsp kosher salt
    1 tbsp freshly ground black pepper
    1tbsp onion powder
    1tbsp garlic powder (or throw in some fresh garlic gloves smashed and skins removed)
    1tsp oregano
    1c water

Directions

Quarter potatoes. Season meat with 1tsp salt and half of pepper and half of evoo. Place all ingredients in oven roasting pan. Season vegetables with all seasonings and evoo, cover, and cook on 250 for about 3 -4 hours. Remove. ADJUST SEASONINGS TO YOUR DIETARY NEEDS AND LIKES!!!!!
