Lighter and healthier than Chicken Parmesan Lighter and healthier than Chicken Parmesan
Number of Servings: 5

Ingredients

    4 oz Mozzarella Cheese, part skim milk
    5 4oz boneless, skinless chicken breast
    1 cup, chopped Onions
    1 clove Garlic
    2 cups Spaghetti Sauce
    1 cup Mushrooms, fresh sliced
    1 cup sweet peppers sliced (mix of red, green and yellow is nice)
    Mrs. Dash (R) Garlic & Herb Seasoning Blend to taste
    Oregano or thyme to taste
    Pepper

Directions

Poach chicken breasts in water or a little chicken broth. Spray casserole dish with a little oil (I use Pampered Chef Spritzer - healthier than nonstick spray) Place chicken breasts in dish. Cover with 1/2 cup onions, garlic and spaghetti sauce. Top with mushrooms and peppers and rest of onions. Season and sprinkle with grated cheese. Bake for 20 mins.
