Ingredients

    1 package(10 oz) fresh spinach
    8 oz of fat free cream cheese
    12 fresh mushrooms, huge 3.5-4 inches wide
    1 oz of asiago cheese grated finely.
    6 oz crab meat,or crab flavored seafood.
    1/2 sweet onion sliced
    1 clove garlic sliced
    Fresh ground pepper

Directions

Peel the mushrooms, trim the stems and remove and put aside. microwave the spinach for 3 minutes, drain and squeeze with paper towel to get out the liquid.
Saute the onions and garlic until just translucent,
puree the spinach, cream cheese, mushroom stems , onion, garlic and 1/2 of the asiago cheese in the food processor. place in bowl and mix in the crab meat. Stuff the peeled mushroom caps with the cheese,spinach crab mixture and sprinkle the remaining asiago cheese on the top. Sprinkle with fresh ground epper. Bake in the oven @ 375 for 15-20 minutes until the cheese is melted on the top. Serve whole

    These mushrooms were okay but not a hit in my household. Served them as an appetizer for a get together and most were not eaten. It seems to be a bit bland, maybe the addition of some seasoning would have improved the taste, if I make them again I will at some cajun seasoning. - 2/2/15

    There's a bad, but kind of funny, typo in this recipe. It says to place the ingredients in bowel... I'm sure it will end up there eventually, but I think you meant bowl. - 12/31/09

    Very Good
    i used large mushrooms and made this for dinner. pretty tastey despite the fact that i left out the onion and garlic. will try with garlic and onion next time though - 4/21/08
