Ingredients

    Hormel Naturals Deli Smoked Ham, 8 Slices
    Dijon Mustard, 1 T
    Dried Thyme
    Salted Butter, 2 T
    Raw Pea Shoots, 2 C
    4 Large Eggs

Tips

Pea shoots are extremely nutritious and have a lovely, delicate flavor. You can find them in spring at farmer's markets or in Asian markets, or you can grow them yourself! For a vegetarian option, substitute an english muffin toasted, then lightly spread w/ dijon and sprinkled with thyme, for the ham.


Directions

Simmer water with a splash of apple cider vinegar for poaching the eggs. smear some of the mustard and sprinkle a little thyme between two slices of ham--repeat until there are four servings of ham ready. Put these into a heated skillet, allowing them to fry gently until bubbly and beginning to curl at the edges.

While eggs are poaching (adjust your timing based on your preference for how done they are), melt the butter in a small skillet at medium heat. Toss the fresh pea shoots in the butter until they begin to wilt and are bright green. On warmed plates, place one ham serving (two slices w/ mustard and thyme between), top with one egg, and then 1/4 of the pea shoots. Serve immediately.
