Introduction
So easy, and so good, in that "we've been eating this forever" kind of way. This is a legacy recpe from my husband's grandmother, updated by me to replace the added sugar with stevia, and use light cream cheese, pie filling, and evaporated milk. This is a big family crowd pleaser, and no one seems to notice the difference, although I'm not sure Grandma would approve... So easy, and so good, in that "we've been eating this forever" kind of way. Ingredients

Crust:
1 cup Graham Cracker Crumbs
1/3 cup salted butter
4 packets of vanilla flavoured or plain stevia
Filling:
1 250g package low fat cream cheese (be sure to use the blocks and not the spreadable kind in the plastic container)
1 14 oz can Light condensed milk
3 tbsp Lemon juice
1 tbsp vanilla extract
Topping:
1 can (~500mL) E.D. Smith Light and Fruity Cherry Pie Filling
Directions
- Preheat oven to 350
- Melt butter and pour over stevia and graham cracker crumbs in small bowl. Cut with pastry belnder or fork utnil well blended.
- Press crumb mixture into bottom of 9x13 or smaller pyrex pan
- Bake at 350 until golden brown (~15 minutes)
- While crust is baking, beat cream cheese until smooth. Then beat in condensed milk and vanilla extract. Once thoroughly blended, beat in lemon juice to thicken.
- Allow crust to cool. Once cool to the touch, pour in filling. Top with cherry pie filling. Chill 1 hour or more and serve.
