    1 lb lean ground beef
    3 cups uncooked brown rice
    1 package of frozen corn
    1 package of frozen onions
    1/2 package of fat free cream cheese
    12 green peppers (more or less depending upon size of peppers)
    water as needed


Layer ingredients into crock pot, except for green peppers: ground beef first, then corn, onions, brown rice. Add water as needed (at least one cup)

Cover and cook on low for 3 hours. Dice in cream cheese and mix. Cook for another 3 hours.

Serve as is or make stuffed peppers:
Core green peppers, place mixture inside. Bake in 350 degree oven for about 35 minutes. Top with fat free sour cream if you'd like.
