Introduction

A hearty filling dinner that is super easy to make! A hearty filling dinner that is super easy to make!
Number of Servings: 6

Ingredients

    4 Cups Cooked brown rice
    1 TBS Olive Oil
    4 Cloves Garlic Chopped
    1 small onion, small sliced
    4 small chicken Breasts in bite sized pieces (I used Trader Joe's just grilled chicken)
    3/4 Cup Artichoke Hearts Chopped
    10 Olives Chopped (I used Greek Kalamata, pitted, Trader Joes)
    2 cans (14.5oz) Diced Tomatoes (do NOT drain) - I used Trader Joes no salt added
    1 Bag Fresh Spinach
    1 container Feta Cheese w/ Mediterranean Herbs
    Basil, Oregeno, Pepper, Salt to taste (but not much needed)
    Freshly Grated Parmesan Cheese to lightly dust before serving

Directions

Preheat Oven to 350

Cook Rice according to directions and spread in bottom of 9x13 glass casserole dish.

Lightly coat pan w/ Olive Oil and add garlic and Onion.

When Onions and Garlic have softened add chicken.

When chicken has barely browned (or heated thru if using chicken is precooked) add Artichoke Hearts & Olives.

Add cans of tomatoes and let cook down for a few mins.

Begin adding handfulls of the spinach to the mixture to wilt down. Keep adding until the entire bag is added.

Add seasonings to taste. I personally just eye ball it.

Let everything simmer together for 10 mins or so.

Pour mixture (and all of the juices) on top of rice and sprinkle Feta cheese on top.

Place in Oven for 15-20 mins until cheese has just begun to brown and has heated thru.

Lightly Dust with freshly grated Parmesan when serving.
