Ingredients

    3/4 cup low sodium chicken broth
    1/4 cup soy sauce
    3 garlic cloves, minced
    2 tbsp Cornstarch
    3/4 tsp ground ginger
    15 ounces boneless skinless chicken (around 2 breasts)
    1/2 tbsp extra virgin olive oil
    2 Green Bell Peppers cut into 1 inch pieces
    1/4 cup water

Tips

Adding cashews is a delicious alternative but don't forget to add the calories! Add some cayenne pepper if you like things a little spicier.


Directions

In a bowl, combine broth, soy sauce, garlic, cornstarch, and ginger. Mix well. Add chicken, stir to coat. Heat oil in a large skillet over medium high heat. Add chicken and mixture to skillet, cook and stir constantly for seven minutes. Reduce heat to medium. Add peppers and water, cook and stir for 5 to 8 minutes or until the peppers are tender.
