Ingredients

1 cup water
1/2 cup quinoa
2 Hillshire Farm chicken sausage links
2 cups (1 can) low sodium chicken broth
1 1/2 cups canned tomatoes, no salt added
1/4 cup black beans, rinsed and drained
1/4 cup shopped onions
1/5 cup chopped fresh mushrooms
1 tsp. olive oil
1/2 cup washed and torn fresh spinach leaves
Tips
If you like a meatier soup, use more sausage but add nutrition information to recipe. This makes a hearty meal. I served it with multigrain club crackers.
Directions
1. Cook quinoa in water according to package directions. While quinoa is cooking, finish other preparations.
2. Pour broth, beans and tomatoes in crockpot and turn control to high, cover.
3. Saute mushrooms and onions in olive oil. Add to crockpot.
4. Slice sausages diagonally into 6 pieces each (12 total) and add to crockpot.
5. Set timer for 1 hour and 45 minutes. If soup isn't to the boiling point, you may need to add a few more minutes.
6. When timer rings, add spinach leaves, stir, cover and reset timer for 15 minutes.
7. Divide evenly among 4 bowls, making sure 3 pieces of meat are in each bowl.
