Ingredients

    1/2 medium onion chopped
    1/4 cup medium pearl barley
    1 tbsp canola oil
    1 garlic clove minced
    32 oz box of reduced sodium chicken broth
    6 oz chicken, cut into bite size pieces
    1/2 cup dried lentils
    1 jar picante sauce
    1 can black beans , rinsed
    1/4 cup chopped cilantro
    4 cups fresh spinach, chopped

Tips

This recipe probably has too much sodium in it, but the soup is delicious. When I add the picante sauce, I always put some water in the jar and shake it and add that to the soup as well. I usually serve it with half of a whole wheat sub roll topped with cheese and broiled until toasted. It is a super filling meal and perfect on a cold cold night.


Directions

Sauté onion and barley in oil until onion is tender. Add garlic, cook 1 minute longer. Add the cut up chicken and lentils, then broth and bring to a boil. Reduce heat; cover and let simmer for 15 minutes. Add the picante sauce and cilantro; cover and simmer 10 minutes more or until lentils are cooked. Add the chopped spinach and simmer uncovered for 5 minutes until spinach is wilted.

Serving Size: Makes 8 - 1cup servings of soup
