Introduction

A lovely substitute for Avgolemono soup A lovely substitute for Avgolemono soup
Number of Servings: 6

Ingredients

    2 T olive oil
    1 cup onion chopped
    3 cup broccolie florets chopped
    3 garlic cloves
    4 cups mushroom stock
    2 eggs
    1/3 - 1/2 c fresh lemon juice
    1 cup cooked farro
    1/2 t salt and 1/4 t pepper (or to taste)

Directions

brown onion and garlic in oil until onion translucent.
add broccoli cook 2 mins until bright green (add salt and pepper too)
add 3 cups stock
bring to boil and simmer till veg is getting soft (but not too soft)
Remove from heat (LET IT SIT FOR A GOOD WHILE)
whisk lemon and eggs; add remaining 1 cup of stock
add 1 cup of the warm stock to the whisked eggs and mix.
Pour this mixture back into the soup slowly.
Slowley heat up soup, but do not boil.
BE CAREFUL NOT TO CODDLE THE EGGS!
