Introduction

Ingredients

    2.5 cups unbleached flour
    .5 cups whole wheat flour
    2 eggs
    6 TBS canola oil
    .25 cups sugar (white or brown)
    1 TBS baking powder
    .50 tsp salt
    2 cups freshly squeezed orange juice (from about 5 large oranges)
    1 cup sweetened dried cranberries

Directions

Blend all dry ingredients except for the cranberries in a medium bowl. Add wet ingredients until fully blended. Mix in cranberries. Let sit for 5 minutes. Scoop 1/4 cup into each muffin cup. Makes about 21 muffins. Bake at 350 degrees until toothpick comes out clean. About 25-30 minutes
